Zucchini Bread

1 1/2 c all purpose flour

1 tsp. ground cinnamon 

1/2 tsp.baking soda 

1/4 tsp. baking powder

1/4 tsp. salt

1/4 tsp. ground nutmeg

1 c sugar

1 c finely shredded, unpeeled zucchini 

1/4 c cooking oil

1 egg


Preheat oven to 350*


Grease bottom and 1/2 inch up the sides of an 8x4x2” loaf pan & set aside. In a medium mixing bowl combine the flour, cinnamon, baking soda, baking powder, salt and nutmeg; set aside


In another medium mixing bowl combine the sugar, shredded zucchini, oil, and egg.


Add dry mixture to zucchini mixture and stir just until moistened.


Spoon batter into the prepared pan and bake for 55-60 minutes. Cool on wire rack.
